This Curry Shrimp recipe starts the traditional way β by blooming curry powder in hot oil to unlock deep, smoky flavor. Fresh vegetables simmer in a creamy coconut base before shrimp are added at the end for a juicy, perfectly cooked finish.

1β1Β½ lbs shrimp, peeled and deveined

2β3 tbsp vegetable oil

2β3 tbsp curry powder

1 onion, chopped

1 bell pepper, chopped

Carrots, sliced

Potatoes, diced

1 can coconut milk
-
Seasonings, to taste (salt, black pepper, garlic powder, Cajun or all-purpose seasoning)

Green onions, chopped (for garnish)
Optional: fresh thyme, ginger, Scotch bonnet or chili pepper for heat.

1. Burn the Curry
Heat vegetable oil in a deep skillet or pot over medium-high heat.
Add curry powder and stir continuously for 1β2 minutes until fragrant and darkened slightly. This step unlocks the signature curry flavor.
2. SautΓ© the Vegetables
Add onion, bell pepper, carrots, and potatoes to the burnt curry oil.
SautΓ© for 3β5 minutes until vegetables are coated and fragrant.
3. Build the Sauce
Pour in coconut milk and stir well to combine.
Season to taste with your favorite seasonings.
Lower heat and let simmer until potatoes are fork-tender.
4. Add the Shrimp
Add shrimp and cook for 2β5 minutes, just until pink and curled. Do not overcook.
5. Finish & Serve
Remove from heat and garnish with chopped green onions.
