🛒 Ingredients

  • 4 lbs beef short ribs

  • 1 cup red wine vinegar

  • 1 cup beef broth

  • 1 cup chicken broth

  • 1 jar tomato paste

  • 1 tbsp minced garlic

  • 3 stalks celery, chopped

  • 1 onion, chopped

  • 3 carrots, chopped

  • Optional seasonings: salt, pepper, garlic powder, Cajun seasoning, rosemary, thyme

👩🏽🍳 Instructions

1. Brown the Short Ribs

  1. Heat oil in a large pot or Dutch oven.

  2. Brown short ribs on all sides to develop flavor.

  3. Remove ribs and set aside.

2. Sauté the Veggies

In the same pot, add:

  • Celery

  • Onion

  • Carrots

  • Minced garlic

Sauté until softened and fragrant.

3. Build the Braising Sauce

Add to the pot:

  • Tomato paste

  • Red wine vinegar

  • Beef broth

  • Chicken broth

Stir well to combine.

4. Add the Ribs Back In

Place the browned short ribs back into the pot.
Make sure the liquid comes about halfway up the ribs — add more broth if needed.

5. Simmer Until Tender

Cover and cook on low for 1–2 hours, or until the short ribs are tender and falling off the bone.

Stir occasionally and adjust seasoning as needed.

6. Serve Hot

Serve ribs with plenty of sauce over:

  • Mashed potatoes

  • Rice

  • Egg noodles

  • Polenta or grits

  • Roasted vegetables

Garnish with parsley or green onion.

🔥 Flavor Tip

For an even deeper flavor, brown the tomato paste for 2–3 minutes before adding broth — it caramelizes and sweetens the sauce beautifully.
