1. Season the Ribs
Pat short ribs dry and season generously with Badia Complete, paprika, and garlic powder on all sides.
2. Brown the Ribs
Heat oil in a heavy pot or Dutch oven over medium-high heat.
Brown short ribs on all sides until deeply golden.
Remove ribs and set aside.
3. SautΓ© the Vegetables
In the same pot, add butter.
Add onion, celery, and carrots.
SautΓ© until softened and fragrant, scraping up the browned bits from the bottom of the pot.
4. Build the Braising Liquid
Stir in tomato paste and cook for 1β2 minutes to deepen the flavor.
Add red wine vinegar and red wine, stirring to combine.
Pour in beef broth and bring to a gentle simmer.
5. Braise the Ribs
Return the short ribs to the pot.
Cover and reduce heat to low.
Let simmer 2β3 hours, until the meat is fork-tender and pulling away from the bone.
6. Serve
Remove ribs and spoon vegetables and sauce over the top.
Serve hot.
