  • 1 chuck roast (3–4 lbs)

  • Avocado oil, for searing

  • Cornstarch, for coating

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 5 cups beef bone broth

1. Season the Roast

Pat the chuck roast dry. Lightly coat with cornstarch, then season generously on all sides with jerk seasoning, Kinder’s Cowboy Butter seasoning, Cajun seasoning, and garlic powder.


2. Sear for Flavor

Heat avocado oil in a large pot or Dutch oven over medium-high heat.
Sear the roast on all sides until deeply browned. Remove and set aside.


3. Build the Base

In the same pot, add onion, bell pepper, and garlic.
Sauté until softened and fragrant, scraping up the browned bits from the bottom of the pot.


4. Add Veggies & Broth

Add potatoes and carrots to the pot.
Place the seared roast back in and pour in 5 cups beef bone broth, ensuring the roast is mostly covered.


5. Simmer Low & Slow

Bring to a gentle boil, then reduce heat to low.
Cover and let simmer 2–3 hours, until the roast is fork-tender and the broth is rich and flavorful.


6. Serve

Shred or slice the roast and serve with the vegetables and broth.
