Serve it with mashed potatoes and broccoli and you've got the whole steakhouse experience at home.
Prep Time: 10 minutes + 10 minutes marinating
Cook Time: About 15 minutes
Servings: 4
Ingredients
For the Chicken
- 2 boneless, skinless chicken breasts
- ā cup Italian dressing
- ½ tbsp butter
- ½ tsp cooking oil
Creamy Parmesan Layer
- ¼ cup ranch dressing
- ¼ cup shredded Parmesan cheese
Parmesan Crust
- 2 tbsp panko breadcrumbs
- 2 tbsp shredded Parmesan cheese
- ¼ tsp garlic powder
- ½ tbsp butter, melted
For Topping
- ½ cup shredded provolone cheese
Instructions
1. Prep & Marinate the Chicken
Slice each chicken breast lengthwise to create 4 thinner pieces.
Place the chicken in a bowl or zip-top bag with the Italian dressing and allow it to marinate for about 10 minutes. The original recipe specifically recommends a short marinade because leaving chicken in the acidic dressing too long can negatively affect its texture.
2. Make the Creamy Parmesan Spread
In a small bowl, combine the ranch dressing and shredded Parmesan until creamy and well mixed.
Set aside.
3. Make the Parmesan Crust
In another bowl, combine:
- Panko breadcrumbs
- Parmesan cheese
- Garlic powder
- Melted butter
Mix until the breadcrumbs are evenly coated in butter.
4. Sear the Chicken
Heat a skillet over medium-high to high heat. Add the butter and cooking oil.
Remove the chicken from the marinade and sear until beautifully browned on both sides and completely cooked through.
The center of the chicken should reach 165°F. Transfer the cooked chicken to an oven-safe baking dish.
5. Load It Up š®šØ
Spread a generous spoonful of the creamy Parmesan-ranch mixture over each chicken breast.
Top with shredded provolone cheese, followed by a generous layer of the buttery Parmesan-panko mixture.
6. Broil
Turn your oven broiler to HIGH and place the chicken on the middle rack.
Broil for approximately 4 minutes, watching it closely, until the cheese is melted and the Parmesan crust is beautifully golden and crispy.
š½ļø Serve It With
I would absolutely plate this the way you were talking about with the Cajun salmon:
Creamy mashed potatoes + seasoned broccoli + Parmesan Crusted Chicken.
That gives you a whole restaurant-dupe plate rather than just another chicken recipe.
š Dr. Jai's Tip
Use fresh refrigerated shredded Parmesan, not the shelf-stable shaker Parmesan. The source recipe also recommends shredding sliced provolone rather than laying whole slices over the chicken, which helps give you a more even cheese layer.
