1 cup rice

1 cup chopped smoked sausage

½ onion, chopped

½ bell pepper, chopped

2 celery stalks, chopped

1 tbsp minced garlic

1 can tomato paste

2 cups water

Cajun seasoning, to taste

Fresh parsley, chopped (for garnish)

1. Brown the Sausage
Heat a little oil in a pot over medium heat.
Add smoked sausage and sauté until lightly browned.
2. Build the Flavor Base
Add onion, bell pepper, celery, and garlic to the pot.
Sauté until vegetables are soft and fragrant.
Season lightly with Cajun seasoning.
3. Add the Tomato Base
Stir in the tomato paste and let it cook for 1–2 minutes to deepen the flavor.
4. Add Rice & Liquid
Add the rice and stir to coat it in the seasoned mixture.
Pour in 2 cups of water and season again to taste.
5. Simmer
Bring to a boil, then reduce heat to low.
Cover and let simmer 20–25 minutes, or until rice is tender and liquid is absorbed.
6. Finish & Serve
Fluff the rice with a fork and garnish with fresh parsley.
