Meat

  • 2–3 lbs beef neck bones, turkey necks, or both

Seasoning & Flavor

  • Cajun seasoning (to taste)

  • Jerk marinade (2–3 tbsp or to taste)

  • Ginger powder

  • Jamaican browning

  • Beef stock (enough to partially cover meat)

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 3–4 garlic cloves, minced

  • Fresh thyme

  • 1 Scotch bonnet pepper (whole or sliced, adjust heat level)

Optional: black pepper, allspice, green onions.

1. Parboil for Tenderness

Place neck bones/turkey necks in a large pot.
Cover with water and bring to a boil.
Parboil for 20–30 minutes to begin tenderizing the meat.

Drain and rinse if desired.


2. Season Generously

Season the meat with:

  • Cajun seasoning

  • Jerk marinade

  • Ginger powder

  • Jamaican browning

Massage the seasoning into the meat thoroughly.


3. Build the Flavor Base

In a large pot over medium heat:

Add a little oil and sauté:

  • Onion

  • Bell pepper

  • Garlic

  • Thyme

  • Scotch bonnet

Cook until fragrant.


4. Simmer Low & Slow

Add the seasoned meat back into the pot.
Pour in beef stock until meat is partially covered.

Bring to a boil, then reduce heat and simmer uncovered for about 1 hour, stirring occasionally, until:

  • Meat is tender

  • Sauce reduces into a rich gravy

Adjust seasoning as needed.


5. Serve

Serve hot over:

  • White rice

  • Rice & peas

  • Mashed potatoes
