🍽️ Smothered Beef Neckbones (Oxtail Flavor on a Budget)
If you love oxtails but not the price tag, these smothered beef neckbones are your answer. Slow-cooked in a rich homemade gravy until fall-off-the-bone tender, this dish brings all the comfort and flavor—without breaking the bank.
đź›’ Ingredients
- 2 lbs beef neckbones
- 1–2 tbsp oil (for browning)
- 2 tbsp butter
- 1 small onion, chopped
- 2–3 tbsp all-purpose flour
- 2–3 cups chicken broth
- Phattykoos BBQ Rub (to taste)
- Everything Seasoning (to taste)
👩🏽🍳 Instructions
1. Season the Meat
Generously season the neckbones with BBQ rub and everything seasoning. Make sure each piece is well coated.
2. Brown the Neckbones
Heat oil in a large pot or Dutch oven over medium-high heat.
Add neckbones and brown on all sides (about 3–5 minutes per side).
Remove and set aside.
3. Make the Gravy
In the same pot (don’t clean it—flavor!), add butter and chopped onions.
Sauté until softened and fragrant.
Sprinkle in flour and stir continuously to create a roux. Cook for 1–2 minutes until lightly golden.
4. Build the Sauce
Slowly pour in chicken broth while stirring to avoid lumps.
Let the gravy thicken slightly.
5. Simmer to Tender
Add the neckbones back to the pot.
Cover and let simmer on low for 1.5–2 hours, or until meat is tender and falling off the bone.
