- 6 chicken thighs
- 2 cups uncooked white rice
- 1 can French onion soup
- 2 cups chicken broth
- 1 stick (½ cup) butter, sliced
- 1–2 cups fajita veggies (bell peppers + onions)
- Phattykoo’s Everything Seasoning (to taste)
- Fajita seasoning (to taste)

- Preheat oven to 400°F.

Season the chicken
Generously season chicken thighs with Phattykoo’s Everything Seasoning and fajita seasoning. Set aside. -
Build your base
In a large baking dish, add:- uncooked rice
- fajita veggies
- French onion soup
- chicken broth
Mix everything together evenly.

Add butter + chicken
Slice the stick of butter and distribute across the rice mixture.
Place the seasoned chicken thighs on top. -
Bake
Cover tightly with foil and bake for 40 minutes. -
Finish & fluff
Remove from oven, fluff the rice, and let it sit for 5 minutes before serving.
